Stir Fry Corn with Dried Shrimps (Bắp Xào Tôm Khô)
This simple, easy recipe is a perfect snack while you don’t have time to make any “complicated dish”. Stir fry corn with shrimps is really delicious when it is combined with butter and green onions.
(or fresh shrimp)
(or olive oil)
(or replace with salt below)
Soak dried shrimps in hot water for 5 minutes. Rinse and drain well.
Cut green onions in half. Chop the top and mince the remaining.
Heat oil in a saucepan on medium heat. Add minced onion. Stir until fragrant. Add shrimps and stir fry for 2 minutes. Transfer the shrimps into a bowl. Set aside.
Return the pan to the stove. Add butter. Then add corn. Stir fry for 4 minutes.
Add fish sauce or salt to taste. Then add shrimps and cook for 1 minute. Add green onions. Stir quickly for a few seconds. Remove from heat right away.
Transfer the corn into a serving dish. Serve immediately.
