Chinese Sausage Fried Rice Recipe (Cơm Chiên Lạp Xưởng)
Growing up in Vietnam, fried rice was a dish that we would eat almost every week. It’s a way to use up the leftover cooked rice that we kept in our fridge. In this easy and quick recipe, Chinese Sausage Fried Rice (Cơm Chiên Lạp Xưởng), we’ll need to use steamed rice, best if kept over night in the fridge. We’ll also need Chinese sausage, sweet corn and green pea. You can use the frozen bags of corn and pea at super markets. You’ll need a stir fry pan and a non-stick fry pan.
Fry the beaten egg with 1 tablespoon of vegetable oil until it's set. Cut into thin strips and set aside.
Stir fry diced Chinese sausages for 2 minutes. Add peas and corns and stir fry for another 2 minutes on medium heat. Set aside.
Heat 1 tablespoon of vegetable oil in a saucepan on medium high heat. Add minced garlic and sauté until fragrant. Then add cooked rice, salt, ground pepper, and sugar into the saucepan. Cook and stir fry for 3 minutes.
Then add chopped green onions and stir fry for 1 minute. Finally, pour the Chinese sausages-corns-peas mixture and stripped eggs. Mix up.
Transfer the fried rice on a plate and enjoy with soy sauce.
